Meet the Chef: Charles Mandemaker
Leading the culinary team at the Five Towns College Upbeat Café is Executive Chef /General Manager Charles Mandemaker a/k/a Charlie.
After earning his degree in Culinary Arts from the acclaimed Culinary Institute of America, located in Hyde Park, New York, Charlie was a professional Chef in California. He specialized in Californian and Southwestern-style cuisine while working in several 5-star restaurants and hotels. After returning to New York, for the past 25+ years, Charlie continued his culinary profession as an Executive & Catering Chef and General Manager for all types of institutions i.e. hotels, restaurants, businesses, schools, camps, and country clubs.
In addition, Charlie is co-owner of Culinary Sensations, a food service management company. To give back to the community, Charles has been involved with charity organizations such as the NYS Commission for the Blind (NYSCB), providing guidance and hands on cooking experience to participants to help them prepare for a career in the food service industry.
A seasoned professional with extensive experience in the culinary field, Charles Mandemaker is committed to delivering great tasting, high quality food and service to his Five Towns College guests.
This is accomplished through regularly scheduled meetings with representatives of the student body in an effort to address concerns, add new menu items, have seasonal offerings, and be responsive to individual requests.
Now, in his second year on campus, Chef Charlie and his culinary team delivers to the Upbeat Café wholesome, fresh, homemade and delicious meals. Unlike other higher education institutions that contract with big corporate entities to provide food services, FTC has identified an adept and high-quality boutique team of culinary experts, providing a CIA Chef on campus supervising (and cooking, too!) its culinary facilities daily.
Chef Charlie is available on campus mostly everyday and is happy to serve students and customize dishes.
